I imagine this would be possible by making all of the batsmen sloggers and rating their batting extremely highly - I expect it's similar to the higher the ratings in cricksim, the faster the scoring rates tend to be

Yup, this is the case here, though the bowlers are rated a bit low on purpose so more runs can be scored and the simulation can be realistic. But, sometimes bowlers get lucky, like in the Aus vs. NZ match where Kane Richardson got a hat-trick.
