We ground the shoes about a cm below the turf however there are occasions in some frames where the back, front, or side of a shoe at certain angles causes the appearance of floating. It's because the shoes do not compress as they might in real life.

Obviously mowing said grass would be part of the career mode right?If anything, I'd probably make grass tech that comes up around the shoes before getting the shoes to compress, that would look cool and hide the problem
