You'll have to search for a custom rom which is based on AOSP, for your particular device model. Once you install that ROM, you're basically off the samsung software.
Your warranty will be void (which I presume, already is.)

If you're looking for something simpler, look out for a new launcher. Nova Launcher and Go Launcher seem to have good "stock-like" features and functionality.
 
Else,other thing you can do is that install the stock ROM with the Touchwiz thing.As you might be rooted,add a new launcher in your mobile and uninstall the original launcher using Titanium Backup!
 
If you're rooted, you might as well remove the samsung apps. Apps like Root Uninstaller help remove system apps.
Launchers can only change the interface of the Home screen and the app drawer. If you don't like the menus, a new rom is the way to go.. Have a look at XDA, and browse for a ROM you might like. Make sure you have a look at the bugs and any incompatibilities if any.

Maybe this is the problem, you don't have enough free space on your device. Try moving stuff to the memory card and try again.
 
Which phone are you using? Touchwiz is proprietary samsung software, and cannot be installed on other phones. Ofcourse, there may be ROMs porting touchwiz to your phone, and you can try them out if you like.
