WIth regards to different formats, I believe that there are separate values for a number of different variables, within batting, there seems to be a second aggressive trait, as some players who are 'normal aggression' seem to score faster than some on 'very aggressive'. As you mentioned there would probably be another factor that alters the player's skill at a particular form of the game. What the editor does do though is edit the basic batting skill. I think that if there are different statistics for different variables they edit this basic batting value.
Likewise with bowling there will be a number of different variables, in particular accuracy/aggression/economy rate. Some bowlers that are highly rated are extremely expensive despite taking wickets. Also, there wouldn't be a need for technique training in these different areas for bowlers if there weren't variables representing them.
On a side note, the form box in the editor doesn't do anything, it changes what you see in the game, but as form is based on previous performances in comparison to the player's skill level, it will revert to their form before you edited it. This means that you can't test the effect different form levels have on a player.
