To keep it simple and understandable..
Swing :- Movement of the ball in the air. It can be assisted by wind flow , weather conditions.
Seam:- Movement of the ball after pitching or hitting the ground. Depends upon the pitch conditions.

Yeah, that's NMA's job, you just input the amount of variations. He'll adjust and put in the CS accordingly.
