If you want to try Bollywood, start with watching Wednesday, Great movie with great dialogues and brilliant acting (no songs is bonus also). I would recommend watching Oh My God too but don't think any non Indian would enjoy it since it's concept is different than others.
 
Bollywood movies have improved since 2011 for sure. Earlier I too never was willing to go out for a film. Bollywood movies either copy the main thrills or the story, but not the whole Hollywood film.

Wait what? Bollywood has gone severely downhill since 2011. Even Indian reviews would indicate so.

I echo this. Wednesday is one of the most terrific films made in bollywood in the recent times. The movie is just about perfect and a little different in terms of the usual bollywood movies, in fact a lot different. If I'm not mistaken, there is a hollywood remake being made with the exactly same storyline, the difference is that, Ben Kingsley will be playing the role Naseerudhin played in the bollywood version.

Yeah that would be a decent starting point, I'm pretty sure that was the last Bollywood film I actually thoroughly enjoyed. Not a rip-off of a Hollywood film either.

Bollywood has some amazing movies if you know where to look. Especially at the Indy level.

If you just look at the highest grossing/best selling films, they are all designed to sell to the lowest common denominator. So lots of useless songs and dance sequences, simple storylines, cheesy dialogue, famous actors, climax where everything seems doom and gloom with a sunny, happy, Disney approved ending. They are big and over-the-top and stretch your suspension of disbelief. Even the movies with good substance in them are usually given the Bollywood treatment, so you get used to looking past that.

Mangal Pandey and Rang de Basanti are 2 movies that come to mind that buck this trend. Peepli Live too, but that wasn't a huge box office hit.

Kahani was a really good movie.

The Indy films are where it gets really good.
