I'm not sure on the exact technical differences, but Pro seems to be a lot more stable than Home. It's designed primarily for the businees environment and hence, it has to be more stable. I've been using it for just over a year now, and I haven't had a single crash. (Apart from those caused by the lethal combination of Cricket 2002 and my GeForce4 graphics card )
I have had both XP home and XP Pro, but XP Home seems to eat up quite a lot of resources than the Pro version. And as Andrew stated the stability factor is missing, plus that XP Home has some compatibility issues, not to mention the security bugs. : :
